Tasting menus are sweeping Seattle’s restaurant scene—and there’s something for everyone! A meal consisting of six to eight courses, a tasting menu is a wonderful way to sample multiple dishes from a particular chef. If you want to impress that special someone or are planning a night out, check out these restaurants:

Known as the "chef in the hat," Chef Thierry of Rover’s is old hat (pun intended) at crafting elegant French cuisine from fresh Northwest ingredients. Join him and the wine director for Burgundy’s Louis Jadot for an evening of culinary adventure on Tuesday, March 2. The seven-course meal features dishes such as Columbia River sturgeon with mhamsa, red beets and perigord truffle, and each course will be paired with a select wine from the Louis Jadot portfolio.

Following their 2009 success, the collaborators behind Seattle Chef’s Table are coming together once again to dazzle your tastebuds. Chefs Jason Wilson of Crush, Maria Hines of Tilth, Thierry Rautureau of Rover’s, Joseba Jimenez de Jimenez of The Harvest Vine, John Sundstrom of Lark and Holly Smith of Cafe Juanita, congregate at Rover’s, March 22 and 23, to present their six-course meal.

For a tasting menu any night of the week, try Seattle’s beloved Canlis. Chef Jason Freney has introduced a perennial menu—including a vegetarian option—based on seasonal produce. The former executive chef at New York’s Eleven Madison Park, Freney brings his inventive and focused hand to dishes such as seared scallops with grapefruit, tarragon and Pernod (a liquor flavored with anise).
